Chic new bistro opens today in downtown Hamilton

A new Hamilton bistro is celebrating their grand opening Thursday (Feb. 6) on King Street East in the International Village.

A new Hamilton bistro is celebrating their grand opening Thursday (Feb. 6) on King Street East in the International Village.

The buzz around Brothers Grimm, a Belgian-style cellar bistro, has been growing for weeks and now the day has finally arrived for their opening.

The bistro is located in the building previously occupied by Sandbar — a former tavern with an incredibly sketchy history.

The space has undergone a massive renovation to bring it up to its current stunning standard.

The bistro is designed to resemble a rustic wine cellar. The walls are lined with barrels and the brick and stone walls create a sense of intimacy and history. The place just oozes comfort and sophistication.

“Brothers Grimm Bistro is the passion project of three partners Alvaro Valencia, Marvin Grimm and Peter DeSotto” an Instagram post offering a little background on the bistro’s origins says.

“The restaurant was a culmination of all our life travels, personal culture, and life experiences all rolled into one concept, unlike any restaurant we had seen before.”

They will be serving up Euro-Fusion creations that are heavy on gamey meats like venison, wild boar, and duck and other not-so gamey meats, but they do cater to all dietary needs.

Their exciting creations can be washed down by a selection of brews, wines and cocktails.

The look and feel of the restaurant are unlike anything else in Hamilton at the moment and the menu is certainly in a class of its own so don’t be surprised if in the coming months it will be hard to find a seat.

Brothers Grimm Bistro opens their doors to the public Thursday (Feb. 6) at 4 p.m. They are located at 193 King St. E (right alongside 193 Bench Kitchen).
